Vinification & Maturation
At harvest, the grapes are collected manually and gently pressed by respecting the quantity of 100 litres must by 150 kilos of grapes. After that, the must undergoes settling of its sediments at 6°C for 24 hours. The alcoholic fermentation starts at a low temperature (18°C) in temperature-controlled stainless steel vats. After tasting and bottling, the sparkling wine is obtained by a second fermentation in the bottle and maturing in our cool atmosphere cellars for a minimum period of 9 months. The riddling is assured by an automated mechanism before disgorging and dosage, and the sparkling wine rests for another 2 months before being released.
This Crémant has a surprisingly fine foam, but is also creamy with long-lasting flavours. It charms with its refined fruitiness, typical of the Pinots varieties. In the nose, plenty of finesse and scents of red fruits will easily seduce bubbly-lovers. In the dining room, it is the perfect accompaniment for a cream of mushroom soup, pan-seared foie gras or for a chocolate or caramel based dessert.
